A nano lot produced by Pak Yosep, a smallholder stationed in the north of Bandung, in a region called Jayagiri. This experimental honey process are similar with the experimental natural, except the cherries pulp are removed.
Initially, coffee cherries are pulped leaving the mucilage intact. After that the parchments are rested on the african raised-beds for 3-4 days. Subsequently, the cherries are removed from the drying beds and placed into oxygen-deprived plastic bags for 72 hours, slowing down the microbes and bacteria reaction, resulting a distinctive and precise identifiable flavor profile. Once this process completed, the cherries are placed again on raised beds until it reached 11% moisture content.
