Ijen Lestari has been part of our coffee supplying partner for the last 2 years, owing to their innovation in coffee processing technique that offer wider spectrum for domestic market.
This new lot proved to be a well-developed implementation of Anaerobic fermentation process. Unlike any others, their anaerobic process took longer than expected, which lasted between 4-6 days submered the whole cherries underwater, after the fermentation completed cheries were laid to dry in raised african beds, until it reached an optimum moisture level.
